  • 1/2 cup (about 50g) grated Parmesan cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat dry 2 pounds of chicken wings with paper towels to remove moisture.
  3. Toss wings in a large bowl with 1 tablespoon baking powder and 1 teaspoon salt until evenly coated.
  4. Place a wire rack on a rimmed baking sheet and arrange wings in a single layer without touching.
  5. Bake wings for 25 minutes, then flip each wing using tongs and bake for another 20-25 minutes until golden brown and crispy.
  6. While wings bake, melt 4 tablespoons unsalted butter in a small saucepan over low heat.
  7. Add minced garlic and cook gently for 1-2 minutes until fragrant but not browned.
  8. Remove from heat and stir in grated Parmesan, black pepper, and optional lemon juice; mix well.
  9. Transfer baked wings to a large bowl and pour warm garlic parmesan butter over them.
  10. Toss gently but thoroughly to coat all wings evenly.
  11. Sprinkle chopped fresh parsley over the wings and serve hot.
