These mini Caprese skewers are a fresh, fun, and fuss-free snack featuring cherry tomatoes, mozzarella pearls, and basil leaves drizzled with balsamic glaze. Perfect for lunchboxes or quick bites, they combine classic Italian flavors in a bite-sized form.

  • 1 cup (150g) fresh mozzarella pearls (bocconcini)
  • 1 cup (150g) cherry or grape tomatoes, washed and dried
  • 1520 small fresh basil leaves
  • 23 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Coarse sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 1520 wooden toothpicks or small skewers

Instructions

  1. Wash and dry the cherry tomatoes and basil leaves thoroughly to avoid extra moisture.
  2. Drain the mozzarella pearls and gently pat dry with a paper towel. If using fresh mozzarella balls, cut into bite-sized pieces.
  3. Assemble each skewer by threading one cherry tomato, a folded basil leaf, and one mozzarella pearl. Repeat until all ingredients are used.
  4. Lightly season the skewers with coarse sea salt and freshly cracked black pepper. Optionally, toss mozzarella and tomatoes in olive oil before assembling for richer flavor.
  5. Arrange the mini skewers on a serving platter or pack into lunchbox compartments.
  6. Drizzle 2-3 tablespoons of balsamic glaze evenly over the skewers just before serving to prevent sogginess.
  7. If packing for later, cover with plastic wrap and refrigerate. Best eaten within 4-6 hours for optimal freshness.

Notes

Fold basil leaves before threading to prevent shredding and make eating easier. Do not drizzle balsamic glaze too early if packing ahead to avoid sogginess. Use fresh, firm cherry tomatoes and dry mozzarella pearls to maintain texture. Optional olive oil adds richness.
