Fresh Watermelon Feta Mint Salad with Tajin and Lime Zest

A quick and refreshing summer salad combining sweet watermelon, salty feta, fresh mint, tangy lime zest, and a spicy kick of Tajin seasoning. Perfect for hot days and easy to prepare in under 15 minutes.

  • 4 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup crumbled feta cheese
  • ¼ cup fresh mint leaves, roughly chopped or torn
  • Zest of 1 large lime (about 1 teaspoon)
  • 2 tablespoons fresh lime juice
  • 1 to 2 teaspoons Tajin seasoning, to taste
  • 1 tablespoon extra virgin olive oil
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into 1-inch cubes and transfer to a large mixing bowl.
  2. Crumble 1 cup (150g) of feta cheese into small chunks and set aside.
  3. Roughly chop or tear ¼ cup (10g) of fresh mint leaves and add to the bowl with watermelon.
  4. Zest 1 large lime (about 1 teaspoon) and squeeze 2 tablespoons (30 ml) of fresh lime juice into the bowl.
  5. Sprinkle 1 to 2 teaspoons of Tajin seasoning over the mixture, depending on spice preference.
  6. Drizzle 1 tablespoon (15 ml) of extra virgin olive oil on top.
  7. Gently toss all ingredients together using two large spoons, being careful not to crush the watermelon cubes.
  8. Taste and add a pinch of sea salt if needed, or more lime juice for extra zing.
  9. Chill the salad in the refrigerator for 10-15 minutes before serving to allow flavors to meld.

Notes

Use firm, ripe watermelon for best texture. Gently crumble feta to keep texture. Add mint last and avoid over-chopping to preserve freshness. Adjust Tajin seasoning carefully to avoid overpowering sweetness. Drain excess watermelon juice if too watery. Best served chilled and fresh. For dairy-free, omit feta and add toasted nuts or seeds.
