Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine sliced peaches, ¾ cup brown sugar, bourbon, and cinnamon. Toss gently to coat and let sit for 10 minutes to macerate.
  3. Transfer the peach mixture to a 9×13-inch baking dish, spreading evenly with syrupy juices.
  4. In a medium bowl, whisk together flour, baking powder, salt, and remaining ¼ cup brown sugar.
  5. Cut the cold butter into the dry ingredients using a pastry cutter or fork until mixture resembles coarse crumbs with some pea-sized bits.
  6. Stir in the milk and vanilla extract until just combined; batter will be thick but spreadable.
  7. Drop spoonfuls of the batter evenly over the peach filling.
